Tiffany Champagne-Langabeer, PhD, RDN, LD serves as Co-Director for the Center for Interprofessional Education at UTHealth in Houston. She received her bachelor of science degree from the University of Texas at Austin and her doctorate in Public Health from the University of Texas Health Science Center in Houston. She has published peer-reviewed articles, presented at national and global conferences, and mentored hundreds of students as they have matriculated through simulations, engaged in case competitions, participated in online and classroom coursework, and acted-argued-and-cried with Standardized Patients.

The COVID-19 pandemic has exacerbated health disparities in certain populations, specifically where there are barriers created by technology or increased risk of exposure to the virus.
